Next, it’s Tiger Prawn with Mizuna Jalapeño Salad. Foremost, the tiger prawns alone are succulent as they are charcoal-grilled at the rightest temperature, and together with Mexican Jalapeño pepper, it tastes impressively unique.
Crab Cannelloni, Goat Cheese and Cream Cheese is the dish that plays astutely with different aromas and flavors. The natural sugariness from sweet potato enhances the crab meat stuffing. The handmade fresh pasta is the bomb, not to mention the favorable, mushroomy aroma that lingers in your mouth.
For main dish, Sous-vide 48 Hours Pork Belly with Pineapple Salsa and Aubergine Purée is a tremendous surprise thanks to the meticulous making of it. The pork belly has been cooked for two days, resulting in the melt-in-your-mouth texture, while its skin remains totally crispy. Sambal oelek on the side of the pork belly turns out to be a stunning combination. Wow.
Another big plate is Smoked Duck with Chardonany Onion Purée and Marinated Pickled Mulberry. The duck is juicily tender like nowhere else, together with its bouncy skin, it’s so scrump-diddly-umptious. Plus, and its side tidbits are marvelous.
